clarklewis Stumbles Again

Somehow I missed hearing about this until someone sent me an email mentioning it. Clarklewis chefs Daniel Mattern and Roxana Jullapat have given notice. They lasted what… nine months? When I went to dinner at clarklewis a month ago, it seemed much the same as it did under Morgan; great appetizers/salads, lousy entrees. Desserts, however, were pretty good. I’ll be interested to hear who Bruce Carey finds to replace them.

    It’s a volatile industry, and very few employers give their staff good reasons for not seeking greener pastures. These are facts. Incidentally, I have a good recipe for a Constant Turnover.

    Ooooooh. Does it have apples in it? Or is it one of those english things with peas and treacle?

    Because I don’t want that.

    You can actually bake any fruit into a Constant Turnover, so long as it’s been spherized with a melon baller. And the finished pastry must be perfectly spherical. Not as easy as it sounds.

    The Constance Turnover, on the other hand… Well, you have to pound a rump steak for that one.
