Pascal Sauton, formerly of Carafe restaurant, has opened Milwaukie Kitchen & Wine on Main Street in the heart of old town Milwaukie.
The 2500 square foot storefront offers a retail section, with specialty groceries and over 100 wines from Europe and the Northwest, as well as a wine club and wine tasting. In addition the store include a coffee shop featuring Ristretto Roasters; a nice spot to while away an afternoon. Pascal and guest chefs will teach a variety of cooking classes. The deli offers high-quality charcuterie, homemade soups, salads, specialty sandwiches and ready dinners to take home. MK&W caters both in-house and off-premise, along with special events, such as dinners with winemakers, authors, farmers, and food celebrations.
Pascal, who will be leading the new shop with the help of his daughter Prunelle, says the culinary center has long been a dream of his; a place to go where people can learn, pick up all the ingredients there, or just relax on the sofas, a kitchen counter, a long communal table, and smaller more intimate tables. Cooking demonstrations and classes in the kitchen studio will be held regularly. They will cover a broad range of skill levels, from beginner technique-building sessions, like knife skills for novices, to guest-chef-taught demonstrations including a multi-course meal.
The cafe area features Ristretto Roasters coffee. Pascal says he wants to serve those who just want a pastry before work or after dropping the kids at school. A choice of morning pastries baked daily, fruit and yogurt parfait, egg dishes and breakfast sandwiches that rotate with the chef’s creative whim. As the day wears on, the deli will have a selection of fresh-made sandwiches and salads.
The Kitchen showcases entrées prepared in-house to take home for dinner nightly. Orders may be placed online or by phone. You have the option to pay online, or you are welcome to pay for your entire order upon pickup.

Lamb and Caramelized Onion Shepard’s Pie
Boeuf Bourguignon (Beef braised in red wine with onions, bacon & mushrooms)
Baked Salmon with Roasted Winter Squash and Apple Chutney
Slow Roasted Pork Loin with Broccoli Puree and Piperade
Couscous with 7 Vegetable Stew and Harissa Vinaigrette
The store will feature a wide selection of gourmet ingredients, such as house-made charcuterie, such as terrines, pâtés, and rillettes. The Kitchen also will stock a selection from local providers, including Olympic Provision, Tails & Trotters, and Chop. Dry goods, pastas, salts, vinegars, mustard… the list goes on. Kitchen cookware will also be available.

Nice write-up and great photos! Allison Bader and I are thrilled to be on the roster to teach classes here together. She and I spent most of last Friday and Saturday prepping in the production kitchen, and we can report that the layout and equipment are top-notch and that Pascal’s crew are a delight to work with. It felt like they’d been working together for years, not days.
Stop by soon to check the place out – have some coffee and one of Kir Jensen’s amazing pastries, or get a really good sandwich to enjoy there or take out. By the way, the grand opening is this Sunday, with live music from 2:00-5:00.
