    Founded in 2008 with the intention of bringing some New Orleans flavor to the Boise Elliot neighborhood, Ethan and Tobias opened EaT: An Oyster Bar featuring farm direct oysters and flavorful Cajun & Creole cuisine. Ethan, who was born and raised in Texarkana, AR, attended The French Culinary Institute in Manhattan. After working in restaurants for several years in New York City, he packed up and moved to the West Coast. In 2006, Ethan was the opening chef for the super busy Everett Street Bistro. In the spring of 2007 he decided to take the helm of much heralded Andina Restaurant ( Oregonian’s Restaurant of the Year.) Missing his native cuisine and having a love for oysters, Tobias and himself opened EaT: An oyster bar in November of 2008, with the intention of creating an oyster eating culture and authentic Southern food in Portland Oregon.
