Adam Higgs Sells Acadia Bistro

July 27, 2015 by PDX Food Dude 1 Comment

Seamus Foran AcadiaSeamus Foran is the new owner of Acadia Bistro, the Creole restaurant on NE Fremont in Portland. According to a press release, previous owner Adam Higgs will be in the restaurant for one more week – “It will be a week of celebration for Adam Higgs, who bids farewell to the stove after 25 years and 10 years of being a restaurateur.  Well-wishers are welcome to stop by to say goodbye and partake in a glass of champagne with Adam any time during the week, who will be working the front of the house.  On Friday, his final day, more bubbles will flow during dinner service, with free cake, truffles and perhaps a few prizes.”

Seamus plans to keep favorites from the current menu, but expand with “some lighter interpretations of NoLa cooking coming soon, leveraging even more produce from local farms”.
