    Mr. Oliver has stumbled on a favorite theme with America’s love affair with coffee and with all things pumpkin spiced. I, myself could never imbibe one of those vile concoctions in a million years. However, when it comes to pumpkin pie. That is American and you better not mess with anything American……I always say.I am fortunate enough to have copied down the famous pumpkin spice mix that was used at Palaske’s Hill Villa restaurant in Portland. ( A Chart House occupies the spot now and the beautiful view with it ) Every time I use it in a cheesecake, a custard, or in a holiday pie ( Hell! I eat pumpkin pie and turkey any time of the year )
    I have even made up a huge batch for Christmas gifts to special friends, who in turn rave about it. It does have a special and simple twist to the recipe. Too bad everyone out there can’ t taste the difference. Happy Holidays!
    ……and Mr. Oliver we hope you enjoy your Wassail bowl, Figgy Pudding and Roasted Goose as well.
