Tails & Trotters’ flagship retail store on NE 24th Ave. in Portland, OR offers more than just chops & ham – it’s a veritable meat candy store filled with all manner of delicious products made from T&T’s signature hazelnut-finished pork.
Rebuilt after a devastating fire in early 2017, the store is a warm, open inviting space punctuated by a pair of old-growth Douglas fir beams. The new design features expanded seating, and a small bar pouring beer, wine and cider.
Sandwiches and salads are available to eat on-site or take back to the office. The menu includes cold deli sandwiches, hot sandwiches and Panini sandwiches – all on fresh Fleur de Lis bread. Daily soup in the cooler months along with plate lunch and sandwich specials highlight Tails & Trotters’ quality products with seasonal specialties.
Tails & Trotters fattens its pigs on hazelnuts specifically to produce world-class prosciutto and other cured meats. At the shop the register is flanked on one side with a deli case filled with a wide array of award-winning deli meats & pâte; smoked sausages, ham hocks and bacon; a broad line of large-format salami – all from T&T’s pork and sliced to order to be enjoyed in-house, or packaged to-go. A petite, boneless version of the Good Food Award-winning Prosciutto Pacifico has recently made its debut in the deli case. The full-sized, whole bone-in leg prosciutto, Prosciutto Pacifico, absent since their 2017 fire, is expected back later this year!
Since Tails & Trotters works with whole pigs, nose-to-tail butchery (or tail-to-trotters in this case) is a necessity. The register is flanked on its other side with a case filled with fresh cuts and a rotating selection of fresh specialty sausages. T&T’s pigs are raised much larger than standard size, providing cuts not seen in any supermarket meat counter. Spanish-style grilling and searing shoulder cuts like pluma and presa, loin chops with nicely portioned fat, skin-on belly, cuts seemingly found only in beef like bavette, brisket, flank, skirt – anything your recipe or imagination calls for.
Tails & Trotters is a reflection of our Northwest bounty. T&T works with a 3rd generation farm in Washington, fattening its pigs with hazelnuts sourced from a regional hazelnut packer in Newburg, OR. The pigs are raised without antibiotics on a diet of NW-raised grains, no corn or soy, and with 3rd party non-GMO verification.
