Esquire Network’s Knife Fight is making sure that Portland is well represented. On the August 5th episode, Greg Denton of Portland’s OX Restaurant will be going up against Jason Wilson of Seattle’s Crush. They will have to create at least two dishes in one hour that incorporate chicken gizzards, juniper berries, and eel. On July 29th, Adam Sappington of The Country Cat will compete with Michael Smith’s Kansas City Restaurant, in which the chefs conquer a forequarter of beef.

Earlier this year, the ingredients featured pig ears and rabbit when Ben Bettinger of Imperial battled Patrick McKee of Paley’s Place while Vitaly Paley looked on. In episode 11, John Gorham and Kasey Mills of Toro Bravo clashed over quail, dragon fruit, and sea cucumbers with David Lentz and Kris Longley of Southern California’s The Hungry Cat restaurants.

“In each half-hour episode of KNIFE FIGHT, two chefs face off in Hall’s downtown LA restaurant to make at least two dishes in one hour from a selection of mystery ingredients (some still breathing). In these anything-goes bouts, chefs vie for one-upmanship in front of a loud heckling crowd and judges that include respected chefs, food professionals and Ilan, himself.”

Clips from the episodes are available online. You can check them out here. You can watch them in their entirety if you have Comcast on demand (including online)
