Ruby Jewel Moves Away from Scooping Ice Cream

Ruby Jewel, the popular Portland Ice Cream Store Switches to Ice Cream Sandwiches Only.

I am sad to say after 10 years of scooping ice cream in PDX, we are now turning into an ice cream sandwich ONLY shop! But, at the same time excited about the new plan.

With a narrowed focus on Ice Cream Sandwiches, Ruby Jewel is introducing a new and exciting menu to satisfy consumers’ indulgent cravings.

PORTLAND, Ore. – July 30, 2020 As the world continues to evolve in response to the Covid pandemic, at Ruby Jewel we’re narrowing our focus to what we do best – making indulgent Ice Cream Sandwiches! We recently converted our NW 23rd kitchen space (aka Lisa’s Kitchen) into a lab where flavor creator and founder Lisa Herlinger creates new and exciting ice cream sandwich combinations.
According to Lisa, “Obviously, the pandemic has been really difficult for local businesses.

So as we’ve worked to manage through this crisis we decided we want to focus on our strengths and be the only dedicated ice cream sandwich shop in Portland… and possibly in the entire Northwest! And what’s great about these hand-held treats is that you can
come in to satisfy your immediate craving. Or pick up a bag or tray with assorted sizes, flavors and combinations for a family gathering, holiday get together, weekend BBQ, hostess gift, or for any occasion.”

Small batch cookies and ice cream flavors, dipped in a range of decadent sauces, then sprinkled with toppings like Valrrona’s Strawberry chocolate, Ruby Cacao (an all natural ruby colored chocolate), caramelized crispies, candied peanuts, or even lavender buds.

In two sizes, these “Jewels” (approx. 4oz) and “Gems” (approx. 2oz) are sure to satisfy any craving. And these new creations are available exclusively at our own ice cream sandwich shop locations.
