Sugar Cube Bakery Closing May 3rd, Becoming Pot Edibles?

April 28, 2015 by PDX Food Dude Leave a Comment

The Sugar Cube cupcake<updated>Kir Jensen doesn’t seem to be able to sit still very long. Today she announced that The Sugar Cube will be closing on May 3rd. The bakery opened as a cart in the summer of 2008, and then moved to the brick and mortar Alberta street location in fall 2013.

The cat is out of the bag! Sunday, May 3rd will be our last day open. Although this is bittersweet, I am super excited for new, future opportunities! I am so grateful for having this amazing experience and being able to share it with all of you. From the bottom of my heart I thank you, dear friends, supporters and my AMAZING team of bakers. I will continue on my quest of sugar shenanigans and the next round may take you a little bit higher…

I love you Portland!!!

The bakery at 3039 NE Alberta will be sold, and according to Portland Monthly “recent changes to Oregon law have opened up some new opportunities. “I’m closing up shop for a ‘higher calling’—wink-wink, nod-nod,” she says, with a little laugh. “Stay tuned for details.”

Meanwhile, rumor has it that the new owners of the space plan to use it for edible marijuana products. Maybe it’s true, maybe not, but I love the article.
