Salt & Straw has partnered with three Portland schools during the month of April. If go to any of their shops and purchase any of the flavors created by local elementary students and Salt & Straw will donate 15% of the proceeds back to their school.
Portland’s future ice cream stars created flavors such as Stop, Guac & Roll, Cow Patty, Gummy Wummy Surprise Sorbet and A Lick of Happiness.

Stop, Guac & Roll
How could we not make a flavor ice cream with such an epic name??? This was created by Keziah, a kindergartener at Chapman Elementary! The flavor description goes like this, “Avocados, vanilla, cinnamon, fried tortillas.” Genius! We were excited to drench tortillas in butter, cinnamon, and sugar; blend up some avocados into a sweet delight; and cross our fingers that the flavor is as delicious as the name is fun.

Details of Salt & Straw’s Ice Cream Flavor Inventing Project:
- Throughout the month of March Salt & Straw head ice cream maker Tyler Malek and his team worked with the local PTA, teachers and students from Abernathy Elementary near the SE Division St. location, Vernon Elem. near the NE Alberta St. location and Chapman Elem near the NW 23rd location to curate flavors for the April menu.
- He presented at school assemblies, staff meetings, classes and more to work with students and teachers and unlock those creative juices!
- Three flavors were chosen from each school by Salt & Straw’s research and development team
- Flavors will be featured on the April menu Friday Apr. 3 through April 30.
- The best part: not only will students, parents, teachers and community members have the opportunity to try these flavors out in store at Salt & Straw throughout the month of April, Salt & Straw is also donating 15% of proceeds from these ice cream flavors back to the schools that invented them. The more folks enjoy the flavors thought up by future ice cream stars, the more their school benefits!

Chocolate Overloade
We spent time with all of the 3rd & 4th grade students from Abernethy Elementary School creating these flavors of ice cream in their classes with them. This chocolate creation was invented by the team of Marlowe, Enzo, Oliver, and Max. Their description goes like this: “Us four decided to use a lot of chocolate because we like chocolate. Who doesn’t!?!” Well we sure do like chocolate a lot too and this flavor definitely lives up to the chocolate-y hype.
Fantastic Fruity Fun Sorbet
Created by Sarah, Evie, Jeanne, and Vivi from Abernethy Elementary School, this flavor is a trifecta of fantastic, fruity, and fun. They describe their flavor like this, “Cherry jellee. The cherry jellee needs to be sticking out.” Along with a description of the ice cream they also provided extra details in the form of a haiku, “We love fruit. It makes you feel alive, colorful, and happy. If you like fruit, you’ll like it!” We absolutely love fruit! This jellee-y sorbet creation is super fruity!
A Lick of Happiness
A magical combination of simple and fun ingredients. This combination was created by 4th graders from Abernethy elementary, Echo, Leah, Charlotte, and Lucy. In describing their flavor, they wrote: “secret ingredients: Sprinkles! Not too much strawberry.” As a combination, this flavor is relatively simple, exciting, and happy!

Cow Patty
A flavor that is as delicious as the pun suggests, this was created by Liv, a student at Vernon Elementary. Her description reads, “Chocolate ice cream with crushed up peppermint patties and dark chocolate chunks.” We wanted to follow through on Liv’s promise of lots of chocolate and lots of cow pies by making delicious homemade peppermint patties sprinkled through lots of chocolate ice cream!
Trail Mix
An ice cream flavor crafted for great journeys through the Pacific Northwest! This flavor was created by Anna from Vernon Elementary. She describes her flavor like this: “Peanut Butter ice cream, little bits of chocolate chips, pretzel, chocolate M&M’s, almonds.” We went all out in creating this ice cream to be an indulgent smattering of peanut butter-y mess.
Hibiscus Pineapple Dream Sherbet
We fell in love with this flavor suggestion from Eva at Vernon Elementary. Along with a beautiful picture (you can see on our website), she describes her flavor like this: “Hibiscus pineapple dream is a sweet, tangy, and tropical mixture of bits and pieces of pineapple mixed in with a touch of hibiscus tea and finished with cream and drizzled with honey. Yum!” We teamed up with our good friends at Steven Smith team to use their Big Hibiscus tea, making this dream sherbet happen. Yum! Indeed!

Honey Bear
This suggestion from Teddy at Chapman Elementary came in the form of a beautiful painting and LOTS of glitter. The description on this flavor suggestion was simple and delicious: “Vanilla Custard, Chocolate Honeycomb, Edible Glitter.” We love how dense and delicious this vanilla custard ice cream came out and we hope it truly lives up to Teddy’s dreams… and his painting!
Gummy Wummy Surprise Sorbet
An amazingly yummy mix that could only be dreamed up by someone truly initiated into the world of gummy worms. This flavor comes to us from Lilly at Chapman Elementary. She describes her flavor like this: “What goes in my ice cream is mango and tangerine sorbet. Then you mix in the red gummy worms in the sorbet for the gummy wummy surprise… P.S. my flavor is a sorbet.” When creating this in our ice cream kitchen we were diligent in making sure that this sorbet completely satiates the gummy, the wummy, and the surprise!
