“The Porter Luxury Hotel” Readies Four Dining Options

By PDX Food Dude Last Update December 4, 2017 Leave a Comment

This press release came in today for a project I had not heard of until last week. It’s The Porter, a Hilton Hotel on SW 2nd Ave. in Portland.

Portland, Ore.’s Newest Luxury Hotel Sharpens Culinary Vision

With Chef AJ Voytko at the helm, The Porter to open innovative dining collection in February 2018

Portland, Ore. (Dec. 4, 2017) – The Porter, a luxury hotel located in central downtown Portland, Ore., has sharpened its culinary vision with the announcement of Executive Chef AJ Voytko, who will guide the direction of the property’s innovative dining collection. With 22 years of experience in the industry, Voytko seeks to create four unique dining options with delicious, seasonal cuisine inspired by the fresh and local ingredients of Oregon.

“AJ is a powerhouse Chef with an excellent track record and a real finesse for Italian cuisine, said Andrea Murray, The Porter’s General Manager. “His multifaceted skill set will propel The Porter to become a Portland culinary destination.”

Voytko will oversee The Porter’s four new distinguished dining options:

Terrane Italian Kitchen + Bar, a soulful Italian-inspired restaurant where meats, fish, and vegetables share the spotlight equally in a refined Italian rustic setting. With the addition of a wood burning grill and oven, these beautiful works of art and utility will produce exquisite dishes.
xport bar & lounge, which features small plates and crafted cocktails, two outdoor dining decks with fire pits and sweeping views of the city and the Cascade Range.
Chiosco, a Neapolitan pizza window, offers a taste of Terrane, serving gourmet pizza to people on-the-move.
Portland Exchange Grocer & Goods, delivering a taste of Terrane with an emphasis on cured meats, paninis, calzones, crafted gourmet coffee, pastries, gelatos, and more.

“I love all types of cuisine and I am always looking to create new dishes and concoctions for my guests,” said Voytko. “I have the utmost respect for the ranchers and farmers that produce such an amazing bounty here in the Pacific Northwest, and I am thrilled I will have the opportunity to support these local families through my work at The Porter.”

Wyoming native Voytko was originally an avid animator. He left college after two years to attend culinary school, where he fell in love with cooking. Voytko considers Chef Trey Foshee his biggest culinary influence. Foshee taught Voytko how to respect and magnificently prepare the food that came through the kitchen doors. Voytko was given the award of Youngest and Brightest Chef by Anthony Dias Blue and the Rising Star from James Beard Foundation. He has even been featured on Diners, Drive-Ins and Dives for Food Network and the Travel Channel’s Food Paradise. Voytko is a passionate philanthropist, working with Unity Farms at the Oregon Food Bank and NoKidHungry. When Voytko is not in the kitchen at The Porter, you can find him spending time with his family.
